What is a Regenerative Food System?
It is the culinary approach that takes every impact into consideration from start to finish. Ecology, human health, flavor, pleasure, community and economics are all considered and brought together without sacrifice. By tracing the food system back completely, from consumption to the soil, every factor is re-examined to exclude mistakes that harm us and our environment. These mistakes are replaced by from-scratch solutions using ingredients that meet the following criteria;


Integrity
​- locally or wild sourced
- low impact on the soil
- plays a complementary role in the eco-system
- nourishing or healing for the human body
- culinarily delicious

When animal meat is used, every bit is used to honor the animals sacrifice.​ Excluded are;
​​
- industrial by-product oils
- anything over processed (white sugar, white flour, corn syrup, etc.)
- over-pasteurized products
- preservatives
- stabilizers (ex. guar gum)
- all chemicals

Impact
Every factor is considered for its impact, even beyond the food. Cooking fuel is carefully chosen, plastic cutting boards and utensils are never used, the service ware & décor are all sourced with purpose. By partnering with producers who hold this same integrity & applying ancestral knowledge with modern understanding, the result puts us back in our fulfilling place within the cycles of Earth.
